This Super Fast Banana Bread recipe is perfect when you are time-poor and want to bake up a delicious treat fast.
This recipe is a great way to use up over-ripe bananas and was kindly shared with me by my sister-in-law and fellow foodie www.goodparsiwife.com and I have used it a million times because it so easy! I add in mixed spice and walnuts sometimes but it is purely optional, even without it, it still tastes great. I also substitute brown sugar for caster as it gives a homely flavor to the end result.
There is no need to write a long post because it is so easy and simple - just pop it all in a bowl, mix and bake!
YOU WILL NEED
2 large bananas mashed
125g | 4.5 ounces butter at room temperature
100g | 1/2 cup brown sugar (you can use caster sugar if you want but brown gives a "warmer flavor")
1 egg
220g | 1 + 1/2 cups | 8 ounces self-raising flour
1/4 cup milk
1 teaspoon mixed spice (optional)
Some walnuts to "dress"the top of the cake (optional)
METHOD
Preheat oven to 180°C/350°F. Grease and line a 21cm x 11cm | 8" x 4" loaf pan and set aside.
In a large mixing bowl, add the mashed bananas, butter, caster sugar, egg, self-raising flour, milk and mixed spice into a bowl and mix until just combined.
Pour into your prepared cake pan, top with walnuts if using and bake for 35-45 minutes or until a skewer inserted comes out clean or the top springs back lightly when touched.
Enjoy sliced as is, or with some butter - so good!
