Do you ever wonder if Santa gets tired of the same old cookies ever year? I mean how many choc-chip cookies can the guy eat in one night? This year when Santa stops by, I am going to have these lip-smacking cheese infused biscuits waiting for him and he can wash them down with a nice cup of coffee to keep him up for long night ahead. My Mum is also a big fan of these!
These are easy, have a great flavor and make a nice change from barrage of sweets that the holidays bring. Great for travelling too - which is very handy for Santa too!
Best eaten within a week - if they last that long.
YOU WILL NEED
1 cup plain flour
2 tablespoons self-raising flour
1 rounded teaspoon curry powder
1/4 teaspoon smoked paprika (optional)
1/2 cup butter at room temperature
2/3 cup finely grated Parmesan cheese
2/3 cup finely grated cheddar cheese
1 tablespoon lemon juice
1-2 tablespoons sesame seeds
METHOD
Add the plain flour, curry powder, smoked paprika and butter into your food processor and process until the mixture is well combined, resembling fine bread crumbs.
Empty into a medium sized mixing bowl and add the finely grated Parmesan and cheddar cheeses and lemon juice.
Using your hands, bring the mixture into a ball.
Roll into a log about 30cm/12" long and place in the fridge for 1-2 hours to set firm.
Preheat the oven to 200°C/400°F and line 1-2 baking trays with baking paper.
Remove biscuit dough from the fridge, unwrap and with a sharp knife, slice into 3-4mm slices, placing the slices on your baking tray with a little room for spreading (you don't need much).
Continue until the whole log is sliced.
Generously sprinkle the sliced dough with sesame seeds and gently press into each biscuit.
Bake for 15 minutes or until golden.
Remove and allow to to cool.
Store in an airtight container.
MAKES APPROXIMATELY 50 BISCUITS
